The flat-head Dutch variety of cabbage produces a large, squat head and although it isn't the best variety for eating raw, it's wonderful cooked and for kraut. Cabbage is a cool weather plant that requires cold conditions to cause the plant to flower and produce seeds. Home growers are well-advised to buy either seeds or well-established seedlings from a reputable supplier, as producing your own seeds requires carefully cutting open the cabbage head to expose the growing point to grow up and produce flowers. It doesn't bolt (to produce seeds) like lettuce or herbs. Happy Gardening!
